I don't mean to brag, of course, but Vogue has included us in their Best Bakeries in London list! Ahhhh!! I know it's not all about praise, press and accolades as at the heart of everything we do, it's our customers, but HOW NICE IS IT to be included in the list 3 years in a row?!
I've learnt never to take anything for granted. Competition is STEEP, especially in London's cake making scene where barriers to entry are typically low and there are many many MANY amazingly talented bakers out there, hence getting any recognition for our little cake business is SO amazing.
The start to 2019 has been choppy - I've been knuckling away at a project behind the scenes having to take time away from both, the daily grind and family, and it's been particularly difficult for me to keep all balls in the air. You may have noticed my absence from social media and the blog (or at least I hope you have....let's pretend you have), and as a result, compounded with the fact that January is generally a dire month for a lot of businesses, it has been challenging. And while I did enjoy going "unplugged" for a bit I very much missed messing around in the kitchen with the Anges gang, and bopping around with X-ray...normality has never been SO REFRESHING!
So to celebrate 'normality' here are two of my most bangin' cake creations in our birthday cakes collection as of late - The Snickers Cake and the Caramelised Banana-rama Cake!
Snickers Cake
I don't even like Snickers bars, but when de-constructed...I LOVE every single element! The peanuts, the chocolate, caramel, the crunch, the goo...all that translates so very well into a cake. Not just any cake though, THIS SNICKERS CAKE. Look at those layers of real peanut butter and chocolate sponges, silky AF peanut butter Swiss meringue buttercream and crunchy peanut butter, glorious chocolate ganache and salted caramel drips...and heaps of cupcakes and Snickers bars on top. Will ya just LOOK AT DEM LAYURZ!
Caramelised Banana-rama Cake
Slowly caramelised brown sugar with ripe bananas...I could possibly just rub it all over my arms and legs and lick away at myself and be the most content. Sticky and gross maybe, but definitely most content.
But this Caramelised Banana Cake saves me from being a savage sticky beast as it's got layers of chocolate chip banana sponge and chocolate sponge with salted caramel Swiss meringue buttercream and the dreamiest caramelised banana jam in between each layer. It's also got a whole host of Kinder chocolates and hazelnuts and a sassy salted caramel drip.
